Why Unlawful Assembly?

Why not? For centuries, people have gathered over a pint to not just catch up, but to move their community forward. So in that spirit, we created Unlawful Assembly to promote the assembly of people, ingredients, and ideas. Because we know great things happen when we meet up for a beer.

BEER FIRST

Award-winning brewmaster Tom Janik and his team brew beers to pair well with food and play well with others, and includes a core line-up on tap and in cans, plus special release beers and collaborations only found in the taproom.

BETTER TOGETHER

The brewery is located inside a food hall rich with aromas and flavors, which means there’s no shortage of inspiration for creative collaborations and food pairings.

Our taproom is a gathering place, offering trivia nights, beer release parties, game days and new discoveries, in a space designed to inspire bold ideas like talking to each other, in real life.

Meet Our Brewmaster

Driven by a rebellious spirit, our brewmaster explores nontraditional ingredients, unexpected flavor combinations, and unconventional collaborations, with the kind of reckless optimism that disturbs the peace and the status quo.

Tom began homebrewing in college while pursuing a B.S. in Food Science at Texas A&M.

Tom’s career in breweries and restaurants began in Nov. 1995 as an Assistant Brewer and he now has 25+ years of brewing experience. During this time, Tom won both a gold and bronze medal at Great American Beer Festival.

In January 2017, Janik was hired by Unlawful Assembly Brewing Company which would open its doors within the year on the 3rd floor of Legacy Hall in Plano, TX.

I tend to gravitate to the more sessionable styles such as pale ales and dark lagers
Favorite pairing:
A nice dunkle or schwartzbeer with smoked brisket or charcoal grilled ribeye
Music that goes well with beer:
Good live music always goes well. I’m a fan of Texas Country/Americana (guitar, fiddle, banjo, pedal steel)
Beer quote:
You can’t buy happiness, but you can buy beer. In dog beers, I’ve only had one.
The moment you knew you were destined to brew:
Probably when I realized I could make money doing what I love.
